I currently have the thick cafe type of rods with just valances on my windows. However I’m going to switch to insulated curtains, at least for the winter, that cover the entire window for the night, but that can be opened to let the light in during the day. I’ll be the one sewing these curtains and can pretty much do anything. What kind are best for this purpose to easily open/close? Tab tops? Grommets? Pinch pleats? Or should I think roman shade type? Something else? BTW I have a variety of single, double and triple windows (across). I don’t have the drawstring type of rods (that you often see with pinch pleats) – and yet I want to be able to easily open these curtains during the day. Help?

Remember cold air is dense than warm air, so cold air is not going to much escape out of the top of a curtain, but it will out of the sides and bottom. Easiest to seal is something like a roman shade.
